The Department of Nutrition in the School of Health Sciences has welcomed Dr Claire Macdonald-Clarke as a new Post-Doctoral Teaching Fellow in Nutrition.
Her areas of research specialism include bioactive compounds in fruit and vegetables and bone health in specific age groups.
Dr Macdonald-Clarke comes to Liverpool Hope from Purdue University where she held the role of Postdoctoral Research Assistant in Nutrition Science. While at Purdue, she studied potassium bioavailability and the effects of potassium on cardiovascular health in adults. She also assisted with a clinical research trial studying the effects of soluble corn fibre on gut microflora and calcium absorption in teenagers. Both studies used randomised controlled trials.
Dr Macdonald-Clarke has spent time as a Research Assistant at the Rowett Institute of Nutrition and Health at the University of Aberdeen. Her PhD, at the University of Aberdeen, was a translational project exploring the effects of fruit and vegetable phytochemicals on bone.
